What a kitchen feels when one machine quits mid-service

A commercial kitchen is a chain, and the weakest link sets the pace. A walk-in that drifts warm puts product at risk before the first ticket prints. An ice machine that can't keep up leaves the bar and the drink station short at the exact hour everyone is thirsty. A make-up air fan that has quit leaves the line hot and the dining room smelling like the fryer.

One vendor for the cold side, the hot side and the air

Trinity works the whole kitchen from our shop at 500 Spring St in Springdale. On the cold side that means commercial refrigerators and freezers, walk-ins, reach-ins, prep tables and undercounter units, plus blast chillers and shock freezers when a menu calls for them. Ice machines get the same attention, from cubers to nugget machines. On the hot side we support ovens, ranges, fryers and griddles: thermostats and controllers, igniters, safety switches, wiring and cords.

The air is part of the kitchen too. We repair and maintain make-up air units and exhaust fans, including motors, belts and bearings, and we install new ventilation when a space needs it. Hood cleaning and fire suppression stay with your own vendors; we handle the mechanical side and coordinate with them so nobody is waiting on anybody. Dish machines, booster heaters and their supply and drain lines are covered as well, within our scope.

Signs a kitchen is running on borrowed time
