Chapter 01
The dish room is the hottest, wettest corner of the kitchen
A high-temperature dish machine heats its final rinse water and then lets go of that heat as steam every time the door opens. In a small dish room that steam goes straight to the ceiling, condenses on cold surfaces and drips back down. Staff feel it first: the room runs warm, the floor stays wet, and the walls start to sweat long before anyone calls it an equipment problem.
Three-compartment sinks and prep sinks add their own moisture and their own demand for hot water. Put a conveyor machine, a pot sink and a line of reach-in coolers within a few steps of each other and the dish area becomes a heat and humidity load that the rest of the building has to absorb.
