The walk-in that creeps up at two in the morning

Restaurant refrigeration fails on its own schedule, and usually overnight. The compressor short-cycles, the evaporator coil frosts over, a fan stops moving air, and by the time the morning crew arrives the box is ten degrees warm and the product inside is a loss.

The warning signs show up earlier. A walk-in that runs all day without resting, a freezer with ice building around the door, a reach-in that sweats, a prep table that cannot hold temperature when the rail is full of pans. Each of these is cheaper to fix on a Tuesday than at midnight.

How Trinity works walk-ins, reach-ins and prep tables

On a walk-in cooler or freezer we start with the evaporator and the condenser, because most failures live in one of the two. Fan motors, the defrost cycle and its termination, the drain heater, the liquid line and the metering device all get checked in order. On the electrical side the contactors, relays and timers do the switching that keeps everything on schedule, and a worn contactor can mimic a failed compressor. The control cabinet in the photo is the kind of panel we open to find that out.

Reach-ins and prep tables run in hot kitchens, so their condenser coils clog with grease and lint faster than a refrigerator in a house. A dirty coil is the most common reason a prep table cannot hold temperature, and cleaning it is part of the diagnosis. Door gaskets, hinges and drain lines are the other usual suspects.
